Mutton Roast




Preparation Time : 10 mins
Marinating Time : 15 mins
Cooking Time : 45 to 50 mins
Serves : 4 to 5

Ingredients:

Mutton - 500 gramsTurmeric Powder / Manjal Podi - 1 tspSalt to tasteCoconut Oil - 2 tblspnCurry Leaves a handfulRoasted Gramdal / Pori kadalai / Pottu Kadalai - 2 tblspn powderedFor grinding:Fennel Seeds / Sombu / Saunf - 1 tblspnKashmiri Red Chilli - 5Red Chilli Powder - 2 tblspnGinger - 3 cm pieceGarlic - 6 fat clovesMethod:Take mutton in a bowl, add in salt and turmeric powder and mix well. Leave this to marinate for 15 mins.Now take a blender, add in all grinding ingredients and make it into a puree by adding some water.Add this puree to the mutton and mix well. Wash the blender with 1/4 cup of water and pour that over the mutton as well.Transfer this to a pressure cooker and cook it for 3 whistle, simmer it for 20 mins. Turn the heat off and let the pressure go all by itself.Open the pressure cooker and heat again, dry out the mutton.Once it is dried, heat coconut oil in a kadai. Add a handful of curry leaves in it. Add in the dried mutton and toss well for 5 mins till it is well roasted.Add in gram dal powder and toss again for 10 mins.Once the mutton turn golden and well roasted, turn off the heat and serve.Pictorial:
Take all your ingredients
season with some salt

mix well and let this marinate for 15 mins
Take a blender jar

add in fennel seeds

add in ginger garlic

i added some kashmiri red chillies, which are optional

add in some chilli powder

now time to blend

make it into a smooth paste
add the paste to the mutton

i washed the blender with 1/4 cup of water

add that to the mutton



mix well

take a pressure cooker

add the mutton 

cover

Pressure cook

now the mutton is done

put it back on stove to evaporate the water

look the mutton is now dry

no water is left

Now heat coconut oil in a kadai

add a handful of curry leaves

add the mutton piece

saute..saute..saute..

cook till it gets nicely coloured

Add in roasted gram dal powder

toss well

all roasted

serve
