Mushroom Kulambu ( Mushroom Cooked in Roasted Coconut and Whole Spices)




Ingrediants:
Mushroom-1 cup chopped
Onion-1 chopped
Tomato-2 chopped
Coriander powder / Malli podi-1 tblspn
Chilli powder-1 tsp
Salt to taste
Oil-1 tblspn

For masala:
Coconut-1 cup
Curry leaves- a handful
Cinnamon / Pattai-1 inch piece
Fennel seeds / Sombu-1 tblspn

Method:
In a kadai add coconut,curry leaves,fennel seeds,cinnamon and roast till it gets golden colour..

Let this cool down and grind into a smooth paste..

Now in the same kadai add oil and heat it up..Throw in onion and mix well..

Add in coriander powder and chilli powder and mix well.

Add in tomatoes and mix well..Now throw in mushroom and cook it for 5 mins..

Add in the ground masala and mix well..Pour in enough water and mix well..

Bring this to boil and simmer for 10 mins until oil separates on top..

Serve with rice or roti..

Roast roast..

Take that in a blender

make into a fine paste
Now saute onions in the pan

add in salt..

and throw in the spice powders

along with tomatoes

add in mushroom

mix well

cook for 3 mins...

add in the masala paste

mix well

add in enough water...

Bring that to boil

Cover it and simmer

till oil separates from this..Hope you can see the oil droplets...
Serve...

Dip some fresh naan bread in this juice...

Healthy Nuts Powder





Ingredients:

Roasted Gram Dal / Pottu Kadalai / Pori kadalai - 1 cup
Cashews - 1/2 cup
Badam / Almonds - 1/2 cup
Dry Ginger - 2 inch piece or 2 tsp of powdered one

Method:

Take badam and cashew in a kadai and roast them till they turn golden, now add in gram dal and roast for a couple of mins.
Now take them in a blender and add dry ginger. Powder them finely.
Store in a air tight container in fridge.

Notes:
1)You dont have to sieve this powder. Just powder this finely and store in a air tight container in fridge.
2)Add a spoonful of this powder to your babies food like porridges when cooking it.

Start by roasting badam and cashews

Add in roasted gram dal


let them roast for few mins


take them in a blender


Add some dry ginger


powder them, dont over grind them, they will be a little coarse. if you over grind them, then they will release the oil from the nuts and turn sticky.


straight away store them in a air tight container, keep it in fridge


you can add a spoonful of this powder to your babies porridge.



























Rice and Dal Powder for Babies























Ingredients:

Rice - 1 cup
Yellow Split Moong Dal / Pasi Paruppu - 1/4 cup
Masoor Dal - 1/4 cup
Cumin Seeds - 1 tsp
Asafoetida / Hing / Kaya Podi - 1/2 tsp
Homemade ghee - 1 tsp

For Making Porridge:
Rice Dal Powder - 2 tblspn
Nuts Powder - 2 tsp
Water - 3/4 cup
Salt to taste (optional)
Homemade Ghee - 1 tsp

Method:

Wash rice and dal in lots of water till it is completely cleaned. Drain it and dry it.

Heat ghee in a thick bottom kadai. Add in the washed rice and dal and roast them on a medium heat till it is golden. It will take around 20 to 25 mins.

Now remove them to a plate and let it cool.

In the same pan roast cumin and asafoetida for a couple of mins and remove them as well.

Now take everything in a blender and powder them finely.

Place a sieve over a place and sieve this mix. You will get some coarse crumbs, add that back in blender and powder again and sieve it again.

Once everything is done, allow the powder to cool and then store in a air tight container. 

I store these in fridge.

When making porridge, i add couple tblspn of this powder and 2 tsp of the nuts powder. I mix them well with 3/4 water and heat  it. I cook this on low heat till it is cooked, it will take around 5 mins.

Now remove them from heat and allow it to cool a bit, you can add some salt and some ghee for taste and feed your baby.

heat a tsp of ghee in a heavy bottom pot


add rice and dal in it



roast till the rice is puffed and dal is well roasted




add some cumin


and some asafoetida


roast it for a couple of mins


Now take rice dal mix in a blender


add cumin, asafoetida mix


powder them finely


add the mix in


now take the coarser crumbs which you get
back into the blender and powder again


rice dal powder done


store it in a air tight container in fridge


Now lets make porridge out of it...take couple
tblspn of powder in a sauce pan


add some water and mix 


Now take some of the nuts powder


add a tsp of that in


mix well


place it on stove


cook for 5 mins


remove and serve your baby..You can add some salt
and ghee in this
